As K-12 nutrition programs shift toward scratch cooking and fresh ingredients, food safety has never been more complex — or more consequential. This session examines how increased handling, more decision points, and inconsistent execution across sites create compliance risk at every stage of the kitchen, and why manual systems can't keep up. With USDA reimbursements and student well-being on the line, attendees will explore how technology-driven guardrails — automated monitoring, digital logs, and guided workflows — make safe outcomes repeatable, scalable, and staff-supported.
